Local Wild & Living Food Nutrition and Chef Certification

Tuition for 30 week Course: $888 (Monthly payment plan is an option)

Drop -In Students Welcome @ $33/class

September 7, 2011 – April 25, 2012

30 Weeks, 120 hours

Wednesdays from 9am – 12pm

Including two overnight field trips:  9/24/11 – 9/25/11 and 4/14/12 - 4/15/12

No class on:

November 23, 2011 – Thanksgiving Break

December 21 & 28, 2011 –Winter Break

March 21, 2012 – Spring Break

Absentee Policy

Up to 4 classes may be missed over the course of the program to still receive the Local Wild and Living Food Chef Certification. Additional absences must be made up by practical application of the course information at Turtle Lake Refuge.

Week 1 (9- 7- 11)

Lecture:  Introduction to Local Wild Living Food Chef Certification, Chlorophyll and the Benefits of Living Foods, Enzymes, Acid/Alkaline Balance 

Practical: Simple Sustaining Recipes

 

Week 2 (9-14-11)

            Instructor: Katrina Blair

Lecture:  Wild Edible Abundance, 13 Global Survival plants, Permaculture Basics

Practical: Field Trip Turtle Lake Community Farm

 

Week 3 (9-21-11)

            Instructor: Katrina Blair

Lecture:  Healthy Soil, Trace Minerals and Essential Vitamins, Worm bins, Compost tea 

Practical: Sprouting, Planting Microgreens

 

1st Wild Foods Overnight Trip (9-24-11/9-25/11)

            Depart at 9:00am on Saturday from Turtle Lake Refuge and return by 4:00pm Sunday.

            Lecture: Physiology of Taste and Flavor Combinations for all practical purposes.

            Practical: A close look into the physiology of the mouth, exploration of the senses, in depth discussion of flavor combinations, cooking without a recipe, letting go and following your senses, tasting to better understand and isolate the senses

            Lecture: Every Crumb

            Practical: Students will learn the art of utilizing every scrap and crumb from compost to pie crust. Cost control and making the most out of your ingredients

            Lecture: Ethical food Preparation, Feeding your Community, Playing a part in the Food Chain,  Developing Relations with Farmers, Educators.

 

Week 27 (4-4-12)

Week 28 (4-11-12)

            Lecture: Raw and Wild Backcountry Travel, River trips, Mountaineering, Camping

            Practical: Preparing to go all wild - Eat Like a Wild Animal

            Homework: All wild camping trip

 

2nd Field Trip (4-14-12/ 4-15-12)

Depart at 9:00am on Saturday from Turtle Lake Refuge and return by 4:00pm Sunday.
